Our current production capacity
runs at 6.000.000 kg. of grapes.
Of course, we know that creating
a great wine starts in the vineyard;
it is for this reason that we try
to establish long-term business
relationships with our high quality
suppliers.
We believe in a hands-on approach
to wine making. Part of this involves
our Technical Director controlling
the whole vegetative cycle, using
an extensive database which allows
the selection of the most appropriate
grapes for the different types of
wine that we produce.
After preparing the grapes, and
once the fermentation process in
stainless steel vats is completed,
we carry out another selection process
according to specific criteria.
For the young wines, las crianzas
and reservas, the first thing we
do is look for the fruit and aroma,
while for the rest of the wines
we focus on those with a stronger
body, in particular those which
are able to endure a longer period
of crianza or maturation. The wines
are matured in French oak barrels.
Because the barrels come from different
suppliers, the resulting wines have
greater complexity and a variety
of soft oak aromas
The barrel time depends on the
wine - each vintage is different
- but with a minimum storage period
of 12 months for the crianzas and
24 months for the reservas. The
wines destined for Crianza and Reserva
are bottled and remain in the bottling
warehouse until they are ready for
sale. This way they can be labelled
immediately before despatch and
so leave at just the right moment.
