White wine is made from a white grape.  On some occasions, there are some
chemical variations, which produce a variety of young wines. On other occasions, the grapes that are used to make white wine, produce a more structured ‘must’, requiring a certain period of crianza or maturation.

Making white wine involves separating the ‘musts’ from the ‘hollejos’ or first residual grape extracts. It is also important to control the temperature during the fermentation process in order to obtain the highest possible number of aromas.
